The Alto-Shaam 500-TH/II Cook & Hold Oven is a compact, space-saving commercial oven engineered to roast, braise, bake, proof, and hold foods with exceptional consistency and moisture retention. Powered by Halo Heat® technology, this fanless, waterless low-temperature cooking system surrounds the oven cavity with gentle radiant heat, eliminating hot spots while preserving natural juices, flavor, and tenderness. Ideal for restaurants, hotels, healthcare facilities, catering operations, schools, supermarkets, and institutional kitchens, the 500-TH/II delivers premium-quality results with minimal product shrinkage and maximum yield.

Designed with Classic Controls, the oven features simple temperature and time settings for effortless operation. The cook temperature is adjustable from 200°F to 325°F (94°C to 160°C), while the holding temperature ranges from 60°F to 205°F (16°C to 96°C). Halo Heat® naturally tenderizes even tough cuts of meat by activating natural enzymes, delivering results comparable to 1–2 days of dry aging in just one hour.
