The Alto-Shaam 1000-TH-I Cook & Hold Oven is a high-capacity, low-temperature commercial oven engineered for slow cooking, roasting, reheating, and extended food holding with exceptional consistency and moisture retention. Utilizing advanced Halo Heat® technology, this oven delivers gentle radiant heat without fans, added humidity, or harsh heating elements, helping reduce shrinkage while improving food quality, tenderness, and yield.

Designed with two independently controlled compartments, the unit allows operators to cook and hold different menu items simultaneously for maximum kitchen flexibility and productivity. The oven automatically transitions from cook mode to hold mode once the programmed cycle is complete, simplifying overnight cooking and reducing labor requirements.
